More blogging about baking

So I'm still here waiting ...

My due date came and went yesterday and now I'm keeping my legs crossed for 24 hours so we don't have a 29th of Feb baby (although just between you and me, I think it would be kinda cool to be born on the 29th of Feb; something special in fact!!).

So while my little person continues to bake on the inside I did some more baking this morning of the cake and biscuit variety. YUM!

My Dad is stoked - he loves baked goods so is enjoying the "nesting" going on at his house (seeing as I can't "nest" like this good mumma, I've had to compromise and bake instead).

So I gave this new recipe a try: 

Raspberry and Coconut Cakes

(Prep Time 20 mins/Cook Time 25 mins)
Makes 12

2 cups (300g) SR flour
3/4 cup (65g) coconut
3/4 cup (175g) caster sugar
60g butter, melted
3/4 cup (185ml) milk
2 eggs
120g fresh raspberries
icing sugar, to serve

Preheat oven to 190C (I did 170C fan-forced)
Line muffin pan with paper cases
Sift flour into bowl, stir in coconut and sugar. Make a well in centre
Combine butter, milk and eggs
Add to flour mixture and use metal spoon to stir until just combined
Gently fold through raspberries

My little helper :)
Spoon mixture into paper cases (I ended up with 14 again but underfilled maybe 2 or 3)
Bake 20-25 mins or until golden (I did 15 mins and they were maybe a touch over done)
Transfer to wire rack to cool completely
Dust with icing sugar to serve (if desired).

LL didn't rate them too highly but everyone else thought they were yum. LL isn't really into "bits", so he had 1 or 2 of these that I made yesterday. The "nom-nom" noises that were coming from him makes me think they were still A HIT!

Next up was these little yummies ...

Ginger Snaps (Annabel Karmel - Top 100 Finger Foods)

(Prep 20mins/Cook 16 mins)

50g butter, softened
100g soft light brown sugar
1 egg yolk
2 tbsp golden syrup
100g plain flour
2 tsp ground ginger
1/4 tsp bicarb soda

Preheat oven to 150C or 130C fan-forced
Beat butter, sugar, egg and syrup together until flufy and slightly paler in colour

Sift dry ingredients and mix to form soft dough
Drop rounded teaspoons of dough onto baking sheets leaving about 5cm between each
Bake biscuits for 14-16 mins (2-3 mins less for chewier/softer biccies) until light brown around edges
Remove from oven and leave to cool for 5 mins then transfer to wire rack

Store in airtight container or freeze for up to a month.

I doubled the recipe today as I made these a few days ago and they were devoured. LL and Mr B LOVE them and I have to agree they are very very very more-ish!

Mum and I also agree that these would be absolutely scrumptious with a scoop of ice-cream smooshed between them. Drooling just thinking about it ... slurp!

After all the rain we've had here today, I'm hoping tomorrow the sun will shine for a bit and we can get outside and go for a really LONG walk. Well long enough to maybe get baby moving.

Or, I'm afraid, everyone's waist lines are going to be rapidly expanding with more baking ....

Baking while waiting

What else do you do on your due date but get in the kitchen and bake some muffins, right?!

I was browsing one of Mum's Women's Weekly's the other night and came across a recipe I thought would be fun to try. I've been searching and searching for a good apple muffin recipe - one that isn't too dry or dense or just too .... not good.


Apple and Cinnamon Muffins
(Makes 12, Cook/Prep time 40 mins)

1 & 2/3 cups (250g) SR flour
1 cup (70g) bran cereal (All Bran)
3/4 cup (150g) brown sugar
1/2 tsp ground cinnamon
2 medium red apples
1 ripe banana, mashed
1/3 cup (80ml) vegetable oil
1 egg
3/4 cup (180ml) buttermilk
1/4 tsp ground cinnamon, extra
2 tsp raw caster sugar

Preheat oven to 180C or 160C fan-forced. (Mum's oven is really hot, so I dropped it down to about 145C).
Line muffin pan with paper cases. (Recipes says makes 12 but I got 14 muffins from the mixture - depends how much you fill them up).
Combine dry ingredience in a bowl.

Then toss through one peeled and grated apple, and the mashed banana.
Whisk together oil, egg and buttermilk in separate bowl and then pour over dry ingredients.
Stir until just together - do not over mix
Spoon batter into prepared cases.
Slice remaining apple into thin slices and top each muffin with a slice of the apple and a sprinkle of the combined cinnamon sugar.

Bake for 20 to 25 mins or until cooked through (I did 15 mins and they were perfect!)
Allow to cool.
(Suitable to freeze)

And the verdict??? .... THEY WERE YUM!

So yum in fact that by the time I remembered to take a picture of the end result there was only six left!

Even my somewhat fussy little man devoured one and a half :)

Now what to bake next??? ....

Due Date

Today I am officially 40 weeks pregnant!

And still no sign of baby ...

But that's ok. I'm feeling good, if not a little tired. The aches and pains have only just started to creep in - sore feet, sore legs, etc.

But all in all this pregnancy has been uneventful, cruisy, and straightforward.

So what does that mean for the birth .... ???

I've got till Monday and then if baby still hasn't made an appearance I'm scheduled for another c-section. (Being induced is not an option due to my having had a previous c-section).

Either way I'm ok with whatever happens. Either way I know by this time next week we'll have a brand new baby, and LL will be a big brother.

And that's exciting.

And that's something to look forward to.

Baby Bump Week 39

I'm 39 weeks today!

Still waiting ....

And looking rather ....



Mum did the ring test on me tonight.

It was the result I expected.

But how accurate will it be?

I didn't do it with LL so I'm a little sceptical.

Time will tell ...

Grateful for ... This Time

I've been quiet on my blog lately ...

Besides feeling unmotivated and unproductive, I've felt like I've had nothing of real importance to say. Nothing to share. Nothing of note.

I'm just sitting here biding my time; waiting. Waiting for this new baby of ours to arrive. Waiting for things to change.

These last few weeks can be like torture can't they?!

I'm excited and full of happiness to finally meet our new little one. To see and touch and smell this little person who has been growing inside me for the last 9 months. To find out what type of person they are going to be. To see our family grow to be one of four.

But at the same time I'm anxious and full of trepidation. Who knows what this little person will bring? Who knows how much our lives are going to change again? Will we handle it? Will we cope? Will LL be ok? Will Mr B and I be ok? Will we enjoy it more this time?

All these questions and anxieties are normal I know. And only time will tell.

I must be patient.

I must stay calm.

And I must remember (as pointed out to me by a good friend) to be grateful for ... This Time.

Despite my feelings of unmotivation, unproductiveness, and even a little bit of boredom, I am enjoying it being just the three of us. Just me and my boys - Mr B and LL.

We won't have this again. It's definitely a time to savour and enjoy.

And to enjoy the quiet and the peace, and the relative easiness of our days. No real demands (except those of a toddler!). No need to rush. No need to be anywhere but here.

This week I am very grateful for that.

Baby Bump Week 38

**** Warning Whingy Post Alert ****

So I just had to get a cold at the 38 week mark didn't I?! Urgh I feel so .... soooooo .... I don't know what. Crook I guess. And snotty and tired, and unless I've popped a couple of panadol then my head feels like it's going to explode from the sinus pressure. Urgh !

Add into this mix a snotty toddler, and a hubby who got the cold first and is still getting over it, and it's been kinda unpleasant around here for the last few days to say the least.

We're farm-sitting the in-laws' place at the moment and I had all these lovely ideas of how we were going to enjoy our time as just the three of us for these last few weeks - swimming in the pool, playing outside, some more swimming, some cooking, some reading, and probably some more swimming. Ummmm... yeah ... none of that has happened. Besides the fact that summer has pretty much disappeared around these parts, who wants to go swimming when you feel like death warmed up.

And just cause we're total gluttons for punishment Mr B and I thought it would be a great idea to start a bit of sleep training with LL this week. Cause you know when we're all sick and tired, that's the best time to do it. Anyway that hasn't been going as badly as I expected, except for the the little guy refusing to nap the past 2 days and me refusing to sit with him until he falls asleep as has been our normal pattern for months now. Fingers crossed the naps return otherwise I'm envisaging serious trouble for myself when the baby is here and we're back in Bots on our own.

Speaking of baby ... the only upside on what has been a sh*tty week is that baby has decided to not make a grand entrance yet. As much as I would love to meet, cuddle and kiss this new little person, I'm just too tired right now to even contemplate giving birth. We're not ready. We're all too snotty, too grumpy, and too run down. So baby, feel free to cook for a bit longer yet. Just give me a couple more days to get over this snot-fest and then you are more than welcome to make an appearance.

And as for the doctor telling me at my appointment last week that baby was well and truly engaged and ready to go??? And that he might be seeing me again sooner rather than later??? .... Gosh they talk some serious drivel sometimes, don't they?!

LL was engaged for weeks and still didn't make an appearance without assistance.

Baby will come when baby wants to come ...

Just don't let it be for a few more days PLEASE!!!

PS - feeling and looking like absolute crap right now so the camera won't be making an appearance this week :( Plus I bought some seriously cheap shampoo and now I know why it was so cheap ... my hair looks awful to say the least. Maybe a haircut will cheer me up???

Baby Bump 36 weeks plus a bit

Yesterday was my 36 week doctors check up ...

So far so good ...

Bump still growing? - check

Still feeling good? - check

Blood pressure fine? - check

Waddle walk well and truly in action? - check

Hard to roll over and get out of bed? - check

Difficult to bend down, tie up shoes and even at times get dressed? - check

Time flying by? - double check

Ready for baby's arrival? .... Hmmmm.... still pondering this one ...

All in all, we are just here patiently waiting :)
